Fromager d’Affinois Brebicet French Cheese descends from the Alps

French cheese comes in different flavors and textures. One of our newest discoveries is Fromager d’Affinois Brebicet.

Fromager d’Affinois Brebicet cheese has a creamy consistency similar to a Brie, but with subtly stronger aromas and components than one would expect. This may be due to the fact that it is made from sheep rather than cow or goat milk. What we did find, however, is that all of our tasters found it incredible and requested multiple samplings.

Of course, this discovery also means that if you are planning on serving it at picnics, dinner parties, the pool or even at concerts, you should plan on having enough on hand.

About Fromager d’Affinois Brebicet

Fromagerie Guilloteau is a family-owned business with two production sites located in the southeast part of France, near the Alps. Fromagerie Guilloteau was created in 1981 with the production of the first Pavé d’Affinois cheese, using ultra-filtration methods. This process retains all the nutrients of the milk in the cheese, which gives a unique taste and texture to the cheese.

Made by one of France’s finest specialty cheese producers and known amongst turophiles worldwide for its unique cheesemaking process which produces ultra-creamy and delicious cheeses, both Fromager d’Affinois plain and Fromager d’Affinois Florette offer a more luscious texture than traditional brie-like and goat’s milk cheeses.

Fromagerie Guilloteau works with over 100 local milk producers, most with an average herd of around 50 cows.

Fromager d’Affinois plain is a smooth double cream cheese that expresses the cheesemaker’s expertise and delicacy in the cheese maturing process. The high fat-content of this cheese positions it halfway between a traditional brie and a triple-cream cheese. Its bloomy white rind surrounds a seductively soft interior and its mild & buttery flavor features a hint of sweetness. It is the perfect addition to any cheese plate or picnic basket, and can be paired with all manner of crackers, baguette, fruits, and sparkling wine. Fromager d’Affinois can also be incorporated into many traditional recipes in order to elevate the flavor.
